Pull the thyme leaves from the stems and finely chop. Add the zest and juice of 2 oranges and the thyme into the muffin base and bake as directed. While the muffins are baking, in a small bowl, whisk together the remaining zest and juice with the confectioners’ sugar. When the muffins have cooled, drizzle the icing over the tops and allow to set for 10 minutes.
