Legend has it that this refined, amber-colored beauty was invented in New Orleans at an unrefined-sounding place called Santini’s Saloon, probably in the mid-nineteenth century. But who knows for sure about any story handed down over the decades—especially if this beverage has been enjoyed while the story unfolded. The cognac gives it a mellowness and the bourbon more of an edge. In a pinch you can use maraschino cherry juice instead of the liqueur, but you’ll get a much sweeter drink.
