Feisty Vidalia Onion Cheese Toasts

I smile to myself every time I hear about Vidalia onions. For years I thought they sprang from the earth of Vidalia, Louisiana, just across the Mississippi River from Natchez, and I took great pride in that. It wasn’t until I got out of college that I became aware of Vidalia, Georgia—and its claim to fame. Oh well. Either way, these yellow-skinned globes of white remind me of spring and, more so, of cooking with Nannie, who could be found sautéing them on the Thermador range my mother won o
