This Caesar dressing is creamy and garlicky, and it clings to the romaine like it should. But the real star of the show is the croutons. If you don’t keep an eye on them, they might get eaten up before they even make it to the salad bowl.

Ingredients

  • 3 large egg yolks
  • ½ cup (120 ml) extra-virgin olive oil

Method

  1. In a medium bowl, lightly beat egg yolks with a whisk. Slowly drizzle oil into egg yolks, whisking constantly. Yolks and oil should emulsify and thicken, almost to the consistency of mayonnaise.
