Blackened Fish-of-the-Day Sandwich

I don’t make it down to the gulf as much anymore as I did when I was younger. Thanks to my parents, I practically grew up on Saint George Island, Florida. On the days when I long for the salt water, I head over to my local fishmonger and ask for his freshest catch, usually grouper, snapper, or redfish, and I make this sandwich. It may not be as good as one you’d eat at a salt-air-breeze-filled beach bar, but it’s pretty close.
