Fried Summer Vegetables with Rosemary and Honey

After spending a summer in southern Spain, I came to realize the culture there is similar in ways to the slower rhythms of life in the southern United States. I fell in love with the people, the culture, and the food when I was there, and now every time I visit, I feel almost like I’m going home. Inspired by one of my favorite Spanish tapas, berenjenas con miel (fried eggplant with honey), these fried summer vegetables are a taste of both my Southern homes: here and across the ocean.
