A pavlova is a type of meringue-based dessert that’s crispy and crackly on the outside with a creamy, slightly chewy center. They’re normally topped with something creamy and can then be garnished all sorts of ways (a few are suggested below). Unlike rich layer cakes or decadent chocolate delights, they’re a light and refreshing alternative to heavy desserts. My first pavlova changed my life—they are seriously that good. Yes, they take time, but I promise they’re well worth it.
