To accompany Fave al Guanciale, I found in the Campo dei Fiori market in Rome a vegetable called barba di frate, or friar’s beard, because of its appearance. In fact the small plants, which can be eaten raw or cooked, look like chives and taste slightly sour. Broccoli, dandelions or rape tops can all be substituted for the friar’s beard in this recipe.
