There’s a lot to love about sweet potatoes. They’re nutritious and filling, and these fritters will take you less than 25 minutes to make. We’ll usually serve these with a simple side salad and our wicked Chipotle Mayo.
Peel the sweet potato, discarding the skin, then grate the flesh into a mixing bowl. Peel and finely chop the garlic, then trim and thinly slice the spring onions. Add the garlic and spring onion to the bowl along with the flour, cajun seasoning and a pinch of salt.
