This is the perfect remedy when the weather has forced you indoors. We use a touch of soya cream to thicken the soup, but a lot of that traditionally creamy texture comes from blending half of the chowder and simply adding it back in with the rest. It’s optional, but well worth the minimal fuss.

Ingredients

  • 3 garlic cloves
  • 200 g potatoes
  • 60 ml soya cream

Method

Heat a little olive oil in a saucepan on a medium heat. While the oil is heating up, peel and dice the garlic, then add it to the saucepan and fry for 2 minutes, stirring frequently to make sure it doesn’t burn.
