Fresh jalapeños make all the difference here. They’re one of the tastiest chillies that money can buy and they’ll easily turn an average guacamole into a truly spectacular dip. If you can’t find them fresh, you can always use a more common variety of chilli. But make sure you keep it fresh!
Halve the avocados and remove the stones. Scoop the flesh into a small mixing bowl, then add the juice from the lime and a splash of extra virgin olive oil. Use a fork to mash the avocado flesh until smooth.
