Fresh jalapeños make all the difference here. They’re one of the tastiest chillies that money can buy and they’ll easily turn an average guacamole into a truly spectacular dip. If you can’t find them fresh, you can always use a more common variety of chilli. But make sure you keep it fresh!

  • 2 ripe avocados
  • 1 lime
  • 1 fresh green jalapeño pepper
  • ½ small red onion
  • small handful of fresh coriander
  • salt and pepper

Halve the avocados and remove the stones. Scoop the flesh into a small mixing bowl, then add the juice from the lime and a splash of extra virgin olive oil. Use a fork to mash the avocado flesh until smooth.

Cut the jalapeño in half and discard the seeds. Finely chop the jalapeño and red onion, roughly chop the coriander, then add them to the mashed avocado. Season with salt and pepper to taste and stir until everything is combined, then serve.
