This is the most delicious of the rice dishes I know, and is the quintessence of ‘marine’ cooking. The best are made in Alicante and in some parts of Castellón de la Plana. As with arroz a la marinera, it is the stock in which the rice is cooked that is responsible for the final quality of the dish, while the other ingredients impart a lovely reddish tinge.
