As in Malaysia, there is a strong Indian presence in Singapore, which naturally affects the food culture. This mild blend can be spiced up by adding extra chillies or Chilli Jam and is great to use when making curries using fish heads or oily fish such as mackerel or kingfish.
Grind whole spices to a fine powder, then stir in turmeric. Store in a sealed jar.
