The richness of the coconut cream used in this curry is offset by the sourness of the green mangoes. Any white-fleshed reef fish is suitable if you cannot get fresh coral trout: try sea bream, sea bass, groper, black bream, ocean perch or any fish from the snapper family. Like any fish recipe, always choose the freshest fish available, not necessarily the one prescribed in the recipe, to give yourself as much flexibility as possible.
