This is a type of pita bread, the flatbread popular in the Middle East and Mediterranean. An alternative way of serving the bread is to bake it without brushing it with oil and to serve it with a dish of extra-virgin olive oil and another dish of za’atar for dipping, so people season the bread themselves as they go.
