This brioche is baked with the cumquat marmalade inside it. You can, however, make the cardamom brioche as a loaf, then slice and toast it and spread it with the marmalade. Serve the cardamom brioche with Pickled Cumquats for yet another taste sensation.


  • 1 cup good-quality cumquat marmalade


  1. To make the brioche, combine flour, 1 tablespoon of the castor sugar, ground cardamom and salt in bowl of an electric mixer fitted with a dough hook.
  2. Mix yeast into warm milk with remaining sugar in another bowl. Whisk eggs in another bowl again. Add yeast mixture to flour with dough hook on low speed, then add eggs and turn speed to high. Knead for 5 minutes o
