This batter is used to make Prawn Fritters with Pickled Eggplant Yoghurt Salad and Vegetable Pakoras with Eggplant Pickle. Try your hand at making your own fritter combinations using this batter.
Blend garlic, 40 ml vegetable oil, salt and spices in a food processor. Blend in flour and baking powder, then add water and blend to a smooth batter. Refrigerate for 2 hours before using.
Heat vegetable oil in a deep-fryer to 180°C. Coat your chosen ingredients with batter and cook as instructed — for example, prawns need only 2 minutes, and vegetable fritters take about 4 minutes. Dra
