In our experience, kids (and grown-ups) can almost always be coerced to eat beans if they’re served in a warm, cheesy dip meant to be scooped up with tortilla chips. Canned beans work best for dips, as they tend to be more mushable—if you start with dry beans, cook them a little longer to soften them up. If you want to up the heat a bit, add a chopped jalapeño pepper or can of green chilies along with the salsa (recipe originally appeared in Grazing).
