Our famous foodie friend Korey Kealey inspired this chili of sorts—or is it a stew, or a curry? Although it does contain beans, it’s loaded with chunks of butternut squash and apples, with a curry quality brought on by a can of coconut milk. Très fall. If you want it to be more of a curry, add more stock or a can of diced tomatoes with their juices, and a spoonful of curry paste along with the spices.
