Zhug is a chilli paste from Yemen with notes of cardamom and caraway, refreshed with lots of chopped coriander leaves. Also known as zahawig, it can be made with fiery dried red chillies or with fresh green ones, and it is often combined with chopped or pulped tomatoes to make a salsa-style dish that Yemenis enjoy with just about everything! As I always have a batch of dried red chilli harissa on the go, I prefer to make the more fragrant green version as a contrast. Fresh and zingy,
