Turkish in origin, this dressing works well with grilled seafood, roasted vegetables, and crisp, crunchy salads. Depending on the dish it is to be served with, you can toss in some mint instead of the parsley, or add fresh pomegranate seeds, or roasted cumin. The tahini you buy should be runny and silky, the consistency of double cream, not solid in a jar with a layer of oil on top.
