I call this ‘safari coconut’ because it always reminds me of going on safari and sautéing coconut over the fire for breakfast, or enjoying it with sundowners at a lodge overlooking a watering hole. Either time of day, it is one of the tastiest ways to enjoy dried coconut and it marries beautifully with a sherried or peaty dram, particularly if there are subtle notes of coconut and warm spice.
