This is a great way to use up leftover boiled or roasted potatoes and another satisfying dish to cook outdoors as you only need one pan over a fire or camp cooker. The word ‘shamba’ is Swahili for garden or vegetable plot and the dish can be adapted to other roots, tubers, greens and beans.
