Baba ghanoush is a classic smoked aubergine purée with parsley from the eastern Mediterranean region but there are equally delicious variations of it in Turkey, Azerbaijan, Iran, India, Pakistan, Afghanistan, the Yemen and all the way across North Africa to Morocco, some with mint or coriander, grilled peppers, tomatoes and yogurt.
