Spicy Ratatouille

This Moroccan twist on the classic French ratatouille is both sweet and spicy and is delicious on its own with a dollop of yogurt and a chunk of fresh crusty bread to mop up the sauce. A lighter whisky with dried or fresh fruit notes sits comfortably with the flavour and texture of this dish. The Glenlivet 12, Glen Grant 10, and Tomintoul 16 all offer a refreshing balance.
