    Halwah (helwah/helva) means ‘sweet’ in Arabic and different spellings of the word are used in Turkish, Urdu and Hindu too, so under this banner there are many delightful sweet dishes. This halwah was one of the first Indian dishes I helped make when I was around five years old. I will never forget that sweet hypnotic aroma of cardamom and ghee followed by the ceremonial presentation of the hot halwah spread on a silver dish and sprinkled with cinnamon in a pattern.
