Method

In a small saucepan over medium-high heat, combine the apple cider and honey and bring to a simmer, stirring until the honey dissolves. Add the cinnamon and stir until dissolved. Remove from the heat and let cool. Pour the syrup into a clean storage container. Use at once, or cover and refrigerate for up to 2 weeks.
