A stylish, spirited classic, this cocktail blends dark rum and ruby port with lemon and egg white to create a rich, frothy cocktail. Though its origins in the Windy City are hazy, it gained national attention pre-Prohibition and was once served at the Waldorf Astoria before fading nearly into obscurity.

Ingredients

  • ounces dark rum
  • ounces ruby port
  • ¾ ounce

Method

Add the rum, port, lemon juice, syrup, and egg white to a cocktail shaker. Cover and shake vigorously for 30 seconds. Fill the shaker with ice, cover, and continue to shake until well chilled and frothy. Strain into a chilled, ice-filled collins glass. Top with club soda, garnish with a lemon wedge, and serve.
