Because lamb broth has a distinctive flavor that can easily take over a delicate soup, it doesn’t have the universal appeal of chicken or pork broth. But in some soups, especially those from the Middle East or North Africa, there is no substitute.
Lamb shanks make the best broth, but they can be a nuisance to track down. Lamb shoulder chops make a good substitute.
