Beef consommé is prepared exactly the same way as chicken consommé except that the basic broth takes longer to cook.

The Basic Broth

  • 4 pounds beef shank, cut into 1-inch-thick rounds, or chuck, round, or rump steak, cut into 1-inch cubes
