Smoked meats perfectly accent the flavor of a delicate consommé. In this recipe smoked chicken or duck and a chiffonade of fresh spinach are added to a clear chicken broth or consommé just minutes before serving.

Ingredients

  • 1 smoked chicken or duck breast, skin removed
  • 6 cups basic chicken consommé or clear chicken or duck broth

Method

Thinly slice the chicken or duck breast and then slice the slices into matchstick-size slivers.

Bring the consommé to a simmer in a 4-quart pot and add the slivered meat and the chiffonade. Simmer for 2 minutes. Season to taste with salt and pepper. Ladle into hot bowls.
