Miso soup is one of the most satisfying foods in the world. Although the Japanese seem to enjoy it most at breakfast, beginning a dinner with a bowl of miso soup always seems to put people in good humor.

In the best Japanese restaurants miso soups are made by carefully blending several types of miso paste to come up with a distinctive “house” style. This recipe uses half white miso and half red, but as you start playing around you’ll come up with your own favorite brands and blends.
