One of the things I like about this soup is that I can serve it any time of the year— hot with rice in winter, and cold without the rice in summer. This recipe reflects my own tastes and contains more lemon and parsley than traditional versions. Be sure to chop the parsley within an hour before serving—its freshness is essential to this soup.
