This flavorful soup is easy to prepare and doesn’t contain so many exotic ingredients that you’ll have to spend half the day shopping. The only unusual ingredient is the preserved vegetable, which gives the soup an exciting flavor; if you can’t get it, the soup is still worth making.

Ingredients

  • ½ pound pork loin or -inch-thick pork chops

Method

In Advance

Remove the bones and any large sections of fat from the pork loin or chops. Slice the meat into ¼-inch strips about 1 inch long. Combine the pork strips with the sherry, cornstarch, soy sauce, and sesame oil. Add 3 grinds of pepper. Work the mixture with your fingers to eliminate any lumps of cornstarch. Pinch hard on the pork strips to flatten t
