This soup has all the characteristics of simple, comforting food. It is easy and inexpensive to make, it lends itself to a happy-go-lucky approach in the kitchen, and it’s deeply satisfying to eat. Exact ratios don’t seem to matter much, so the soup always turns out well.

The easiest way to make leek and potato soup is to chop the leeks and potatoes, simmer them in water until the potatoes are soft, throw in a tablespoon or two of butter, grind in a little pepper, and serve.
