Morels are so special that they deserve a soup all their own. They also take very well to drying, so you can use them dried when fresh morels are out of season.
Fresh morels are usually available in the spring and early summer. They are sometimes very expensive, but often they have dried out somewhat—which does them no harm—and a nice bagful weighs surprisingly little. Don’t buy morels that are wet or smell damp.
