This dramatic soup was inspired by a recipe from Paul Bocuse, who loads an entire pumpkin with heavy cream and bakes it. His version is delicious but so rich that when I prepared it one fall I truly horrified some health-conscious relatives visiting from California.
In this version some of the cream is replaced by chicken, turkey, or vegetable broth; it isn’t quite as rich as eating bowlfuls of heavy cream, but it’s still very rich.
Don’t do what I did and buy a pumpkin too
