A traditional matelote is a French soup or stew made from a mixture of freshwater fish and wine. The Burgundian version given here originally called for red Burgundy and the local freshwater fish, but I’ve Americanized it somewhat so it can be made with both freshwater and ocean fish—freshwater fish can be hard to find in some parts of the country—and California wine.
