I first read a duck recipe similar to this one in Nicole Routhier’s The Foods of Vietnam. I like duck in almost any form, but this soup is one of my favorites because the duck skin ends up sweet, spicy, and crisp while the meat inside is tender and juicy without being overcooked. Another thing I love about this soup is that it uses only the legs from the duck, leaving me the breasts for other dishes.
