This is a great method for using leftover fish soup and chunks of leftover fish that would be too fragile and would fall apart if reheated in broth. Any Western-style fish soup will work as long as it doesn’t contain too much starch to begin with (I don’t recommend leftover clam chowder). I particularly like this dish made with leftover Mediterranean-style soups such as bouillabaisse or bourride.
