There are two kinds of cheese soup: European and American. In European panades, bread is layered with grated cheese, broth, and other ingredients such as cabbage, preserved goose, or stewed onions and the whole thing is baked, almost like a casserole. In American versions—one from Vermont is the most popular— broth or milk is thickened with flour, and Cheddar cheese is stirred in at the end.
