Use what you have! It could be the guts of a butternut squash with a couple of onion ends to make a quick squash stock for a squash risotto, or it could be a medley of odds and sods collected over the week. Here are afew tips:
Leave out potatoes and brassicas, i.e. the stinky cabbage family.
Try to keep a plastic box going in the fridge to collect veg scraps.
If you have them, throw in an extra carrot, onion, le
