Make sure all the ingredients are at room temperature as this helps them emulsify. Mayonnaise can be kept in the fridge in ajar for a few days.

  • good pinch of salt
  • 1 tsp Dijon mustard, or

To make in a food processor

Using a whole egg makes a less conventional, thinner mayonnaise, but if you’re using a food processor it helps prevent the mayonnaise becoming too gloopy with the fast action of the machine. Crack the egg into the bowl, add the salt, mustard and 2 teas
