This is a classic Mexican way to serve tomatillos. You can use cooked tomatillos if you want a sweeter condiment (boil for 5–7 minutes before following the recipe), but kept raw they have a sour freshness that–s perfect for summer–s day This lends itself to all things grilled – chicken, pork and white fish. Pile on to tortilla chips or into soft wraps along with pork or chicken.
