Finding the magical spring morel in English woods delivers the same feelings to me as landing a big wild trout - pride, triumph, a joy in the chest, the urge to run home. But they are elusive, and so, unless you know of a closely guarded spot or a good grocer, use dried morels, which require no more than a foraging expedition to your local deli.
