The name of this recipe has become a bit of a joke for me as, on asking random Turkish people about it, they look nonplussed and walk away briskly. I am now convinced that since my Turkish holiday 12 years ago I have remembered something wrong. Whatever the name, the recipe requires a small frying pan, as it is important that the eggy cake and filling remain deep in the same way as a Spanish tortilla.
