A radish with bread and butter is one of those modest pleasures that is as nourishing to the soul as tomatoes and salt or salami with gherkins. It was their destiny to find each other for man’s joy.
Remove the radish stalks and leaves, and rinse the radishes. Reserve the leaves for salads or eating cooked like spinach.
Put the radishes on a plate with a little pile of salt and some cold, hard unsalted butter. Eat all together with a hunk of torn white sourdough. I think it fitting to do the buttering and any cutting with a penknife.
