This makes for a most refreshing, cooling lunch and something I love to eat with bread, unaccompanied by fish or meats.


  • 1 cucumber
  • 2 heaped teaspoons flaked sea salt
  • 350 ml


Peel the cucumber and cut it into very fine slices, as paper-like as possible. Put it in a colander and sprinkle with the salt. Leave over a bowl to drip for 1 hour.

Squeeze the cucumber over the sink to get rid of the excess water and combine with the yoghurt in a serving dish. Peel and finely chop the garlic and onion and add these. Coarsely chop the dill and sprinkle over. Add a smal
