This makes for a most refreshing, cooling lunch and something I love to eat with bread, unaccompanied by fish or meats.
Peel the cucumber and cut it into very fine slices, as paper-like as possible. Put it in a colander and sprinkle with the salt. Leave over a bowl to drip for 1 hour.
