What a dainty sandwich, definitely a nibbler not a muncher! Anchovy paste such as Gentleman’s Relish is a delightful addition and, I never thought I would say it, but so is Marmite, faintly dragged over the butter. Here I shall make this teatime snack in its purest version without either.

Ingredients

  • a lot of butter
  • 1 cucumber
  • 1 level tablespoon flake

Method

Allow the butter to come to room temperature. Skin the cucumber and then grate it into thin discs on a mandoline or slicer, or cut it very thinly with a knife. Put it in a colander and sprinkle over the salt, turning it with your hands to mix well. Leave the cucumber slices to drip over the sink for at least an hour. Rinse it under cold water briefly and then wring it out like socks in the bath
