Elderflowers are magical and I ’ m sure that the fairies make cordial too. Having my nose stuffed in this heady hedge while collecting the white chandeliers makes me smile as I pick.

Ingredients

  • 25-30 largish unsprayed elderflower heads
  • 1 kg granulated Sugar
  • 25 g

Method

Rinse the flower heads gently and shake over the sink to help get rid of any insects. Snap off any particularly thick stalks connected to the flower heads, leaving just the slim stems holding each blossom. Put the flower heads in a large preserving pan or bowl. Sprinkle with the sugar and tartaric acid.

Peel the lemon rind in wide strips and add to the pan, along with all the lemon juic
